Georgian bread and all kind of delicacies meet at Tone, the Bread & Wine Lab which defines itself as “a bakery a bit Georgian, definitely Nordic, obviously milanès”. A boutique bakery whose name comes from the turret-shaped oven used in Georgia to bake bread, Tone is located in Milan’s university district, Piola/Città Studi. But, mind you, it's not a Georgian bakery, as it also serves freshly made loaves of bread using locally sourced grains. A must-try? The Georgian khachapuri, a boat-shaped pizza - or open calzone depending on schools of thought - filled with cheese with a raw egg yolk affixed to the centre once baked and to be quickly stirred.
